GHANAIAN INSPIRED SEAFOOD (MUSSELS) SOUP

Cooking Time:45-50mins         Prep Time:10mins Ingredients: 1tblspn olive oil 1 medium size onion 2 gloves garlic 1 inch size fresh ginger 2 habanero green peppers 3 big size fresh tomatoes or 200g of can peeled tomatoes 1 vegetable stock block Fresh or frozen mussels salt Method Firstly, blend the onions, garlics, ginger, peppers and tomatoes together frying all in a oiled suacepan on a medium heat for 2-5 mins. Then add some water about the quantity of the soup one preferes. Increase the heat and allow to boil to a prefered reduction of the soup between 20-30 minutes. After 20-30mins, lower the heat, add the vegetable stock block and allow the soup to boil for another 10mins or till oil starts to form up on the surface of the soup. Ghanaian Inspired Onion And Eggplant Stew With Finnish Potatoes

This is a great combination of one of the most popular staple foods in Finland, potatoes. I paired it with my Ghanaian inspired eggplant stew because it works just like yam, one of Ghana's most popular staple foods. Serve with a few slices of avocado is very typical in Ghana and thus my introduction of it to my Finnish community.
