Homemade Fresh Pickled Cucucmber

I love pairing this with my Finnish meals

Ingredients
1 fresh cucumber
1 cup sugar
2 cup vinegar
3 cup water
mint leaves

Method of preparation

Cut cucumber into two and with a spoon take out the watery seeds.
Then slice into preferred shapes and place in storable jar or bowl.
Mix sugar, vinegar and water in a separate bowl, stir to dissolve sugar completely.
Chop mint leaves and add. Now pour mixture over cucumber till all are immense in the mixture.
Cover jar or bowl and leave to stand for an 15mins to 1 hours before serving.

Ghana-style Crispy Fried Chicken

Who ever invented steaming the chicken before frying is a genius in my world. This method of cooking the chicken is simply amazing as the chicken crisps up so perfectly but yet so juicy inside. Personally, I think this recipe is a crowd pleasing one for any occasion. Not to mention how stress free it is to make. Hope you enjoy it as much as I always do and so does my little ones.
