Ghanaian Ripe plantain pancakes (Korkoo Pancakes)
All you need
1 ripe plantain (korkoo)
2 eggs
1/2 vanilla bean seeds
How to make it
Mash korkoo in a bowl with a fork or hand blender into a smooth texture.
Add eggs, vanilla seeds and mix very well.
Scoop with spoon and fry with coconut oil or butter 1 minute on each side.
Enjoy as a dessert or breakfast.
Tip. For dessert serve with ice cream. For breakfast enjoy with hot chocolate (Milo), tea or coffee.
