Ghana Jollof (made easy)

Plated Jollof with Shito and Avocado

Ghana Jollof Recipe  (my style)

All you need:

100ml of vegetable oil
1 medium size onion
1 tsp chili powder
1 tblspn tomato paste
200g can crushed tomatoes or plum tomatoes.
1 vegetable stock cube 
1-2 dry bay leaf 
1/2 tsp each of curry powder,  ground nutmeg, white pepper and dry basil.
Salt to taste.
1 cup rice.
1 cup water.


How to make it:

First make the tomato sauce. In a frying pan add sliced onion to hot oil over medium heat. (This is MY quick and easy go to recipe 45mins or even less and your jollof is ready) .

Add chili powder and tomato paste. Stir to combine and add crushed tomatoes. Cook for 15 mins stirring occasionally. 

Add spices and salt to taste. 

Next wash and add rice, I used jasmine rice, with 1/2 cup of water to tomato sauce. Stir to mix, cover and cook for 15-20 minutes, stirring every minute or two. 

Note: This is a quick jollof recipe so it needs to be watched always. Add the rest of water in bits if necessary till rice is cooked.

Tip! I always stir my Jollof with a fork using a spoon will make a mushy rice.

Ghana-style Crispy Fried Chicken

Who ever invented steaming the chicken before frying is a genius in my world. This method of cooking the chicken is simply amazing as the chicken crisps up so perfectly but yet so juicy inside.
