Plantain Balls
When I first tested this recipe it didn't come out as I wanted. Finally glad it came together perfect.
All you need
1 plantain (makes 8 balls )
1 cup breadcrumbs seasoned
1 egg
Oil for frying

How to make it
Cut plantains with skin on into 2 inch sizes( I made 8 from my big size Plantain )
Boil till plantain starts to push out of the skin
Drain and immediately add cold water to stop further cooking and also cool them.
Take out of water and pill them carefully.
Roll them in your hand into balls carefully squeezing out the extra water
Prepare breadcrumbs in a bowl and beat egg also in different bowl
Heat oil
Start frying by first coating in crumbs, then egg wash and back to crumbs for a second coat.
Deep frying till golden brown and cooked.
Enjoy.
