Cocoyam quiche

I love exploring with my Ghanaian ingredients and this is one of my favourite for breakfast and brunch ideas. No flour needed for this easy and delicious cocoyam quiches.

All you need

2 small cocoyam tubers
1 tablespoon dill
1 teaspoon salt
4 eggs
1 celery stick finely chopped
1/2 red ball pepper finely chopped
1-2 garlic gloves finely chopped
1 teaspoon each dry basil and thyme
1 Finnish sausage

How to make it

Pre heat oven 200° c 
Peel, wash and grate cocoyams.
Grease muffin stray and fill with grated cocoyams filling out the muffin shape.
Bake for 20 -30 mins or till they start to brown.
Meanwhile add eggs, spices and vegetables. Set aside.
Also cut sausage into small pieces.
Take out cocoyam sausage and then pour egg mixture over them (about 2 tablespoons each for each quiche) .
Bake for 20 minutes or till egg mixture is set.

Enjoy for breakfast or brunch.
