Ginger And Soy Sauce Chicken

Juicy baked ginger-soy chicken
I have a thing for ginger and I must say, it never gets boring in my kitchen with ginger. This particular recipe has been playing around in head for some time now and I had to give in eventually.

I took a leap of foodie faith and was not disappointed at all. A simple blending of the ingredients together and marinating the chicken for at least a day is all the effort it requires.

Easy recipe for you to try your hands on.

Serves 2 adults  and 2 children
All you need:
8 chicken thighs/drumsticks pieces
50 g fresh ginger
3 garlic cloves
1 habanero pepper or scotch bonnet pepper
1 tablespoon of chopped rosemary or thyme
1 cup of dark soy sauce
1/2 cup of sesame seeds

How to make it
Blend all ingredients together except sesame seeds into coarse mixture. You can blend it smooth but I love to have some bits of ginger and herbs in my marinades as they look better and one can actually see what is the marinade.

Add marinate to chicken in a bowl. Add in the sesame seeds  and toss together to cover chicken completely.

Cover tightly and let chicken marinate over night in the fridge.

Arrange on a baking tray in room temperature for 20 minutes. Pre-heat oven 175 degrees or gas mark 3.

Back chicken for 1 hour, then increase to 200 degrees(gas mark 4) and bake for 15 -20 minutes or until chicken are cooked.

Tip: My lil secret in baking chicken is to pre-heat the oven with the empty baking tray, that way the tray will be hot and when the chicken gets on the tray, it gets this beautiful char on them.

Eggs And Sardines Stew Ghana Recipe

This is my own very basic recipe and cooks in 10 -60 minutes depending on the quantity of the stew. Ghana-style Crispy Fried Chicken

Who ever invented steaming the chicken before frying is a genius in my world. This method of cooking the chicken is simply amazing as the chicken crisps up so perfectly but yet so juicy inside. Personally, I think this recipe is a crowd pleasing one for any occasion. Not to mention how stress free it is to make. Hope you enjoy it as much as I always do and so does my little ones.
