Black Star Chop Bar (Pop Up Restaurant Day)

An amazing experience, great ambience and relaxing atmosphere on our 2nd Ghanaian pop up restaurant here in Liminka. We received great feedback on our dishes and we were honestly honoured. On the menu was; Chinchinga (pork kebabs), Anwamoo (Ghanaian fried rice) served with Vegetable stew, Herb salad (Finnish pickled cabbage and herbs) and dessert was a personal favourite Ofam Cake filled with Finnish lingon berry jam and blueberry flavoured quark.  The happy faces and feedbacks are everything a food vendor loves to see and hear. Although our Finnish weather was on the cold windy side, luckily a sunny streak of sunlight and a home location helped saved the day. I must say a big Thank you to God for His undying Grace and Peace, To my Husband for his ever, unwavering support, to my friends and neighbours for  their lovely supports and always making time to honour my invitations. And also to our new met acquaintances from our local community for taking the bold step to come...

I See No More Human Race Just Human Species

The day I will NEVER forget. On the 11th of May 2017, whilst playing with my daughter, she suddenly said; 'mommy you have a different face'. I was taken aback as to why she suddenly said so. Off course I asked her why and how different is mommy's (my) face different from yours(hers)? Her reply had me thinking all night. I had to understand or know from where, or how, or what source her smart mind gathered this information from. Honestly her answer didn't make me sad or angry. It actually enforced my personal belief on how the world has made us to judge and point fingers at each other as human species. Her answer, only confirmed how some people actually call me behind my back or how some people see me. I'm a Proud African. A Ghanaian as a fact and with so much pride in my nationality. Ghanan Spicy Fried Kypsä keitoobanaani Resepti ja ohje Ainekset 500 ml kasviöljy 1-2 kypsä keittobanaani/jauhobanaani 1 tl sipuli jauhe 1 tl inkivääriä jauheena 1/2 tl chilijauhetta 1/2 tl suolaa Miten tehdä se Kuumenna öljy syvässä kattilassa tai paistinpannu Kuori ja leikkaa jauhobanaaneja kahtia . Leikkaa puolikkaat poikki tehdä puolikuun muotoisia . Lisää mausteet ja sekoita kattamiseksi . Lisätään varovasti jauhobanaanit kuumaan öljyn ja paista kunnes kullanruskeita. Poista ja laittaa keittiön paperit ryhtyä ylimääräinen öljy . Ripottele suolaa . Tarjoile lämpimänä paahdettuja maapähkinöitä . Mausteiset keittobanaanit ghanalaiseen tapaan. Resepti ja ohje Ainekset 500 ml kasviöljy 1-2 kypsä keittobanaania/jauhobanaania 1 tl sipulijauhe 1 tl inkivääriä jauheena 1/2 tl chilijauhetta 1/2 tl suolaa Valmistusohje Kuumenna öljy syvässä kattilassa tai paistinpannussa. Ofam Ghanaian Plantain Bread/Cake

This traditional Ghanaian bread or cake is a personal favourite of mine. I love how spicy it is yet very versatile. It can be served as main dish, side dish and even dessert. This one I made was inspired to create something very Ghanaian for my end of school party. I decided on this one with a Finnish twist to it. Making this 'dessert' was something I had always wanted to do and the timing was perfect. The Finnish twist I incorporated was the famous spice cardamom here in Finland. Adding this to my Ofam cake recipe was to help with the taste buds of my Finnish friends as to something they're familiar with.  In addition, I served the Ofam cake with some whipped cream, lingon berries jam and some extra fresh lingon berries. It was simply a delicious combination and I felt so proud of my Ghanaian cuisine all over again.  Not surprisingly, Ofam break/Cake is vegan and gluten free.
