Ghanaian Vegan Shito

I have been working on this recipe for a while and I am so happy it's finally worked. I am crazy about how healthy, delicious and versatile my Ghanaian cuisines are. For the normal shito simply swap the soya grits of this recipe with dry shrimp/fish powder. It's Ghanaian foods made easy in Finland. Ingredients 500ml of any oil of choice 1 big size onion 2 inch size fresh ginger 5-6 garlic gloves 2 tblspn tomato paste 2 tblspn Maggi vegetable liquid fondue or 1 vegetable cube stock 2 tblspn chili powder 4 tblspn soya grits dried Method of preparation Stir in onion mixture Add half of oil to pan on medium heat. Peel and blend onion, ginger and garlics into smooth mixture. Add to hot oil and fry for 2 minutes stirring occasionally. Next add in tomato paste and stir to combine. Ghanaian Ripe plantain pancakes (Korkoo Pancakes)

All you need 1 ripe plantain  (korkoo) 2 eggs 1/2 vanilla bean seeds How to make it Mash korkoo in a bowl with a fork or hand blender into a smooth texture. Add eggs, vanilla seeds and mix very well. Scoop with spoon and fry with coconut oil or butter 1 minute on each side. Enjoy as a dessert or breakfast. Tip. For dessert serve with ice cream. For breakfast enjoy with hot chocolate (Milo), tea or coffee.

Sobolo Ghanaian Bissap Drink

I adapted to this version of my Ghanaian sobolo  because I haven't found the fresh or dried bissap/roselle leaves in my locality yet. I used Hibiscus tea for this recipes and its as close as the original bissap/roselle, and hibiscus is actually from the same genus of flowers. I really loved this and have been stuck to it since. Enjoy. All you need 1 cup of water 2 inch size fresh ginger 1 inch size cinnamon stick 2-5 fresh cloves not grounded 5-7 fresh mint leaves 2 bags of hibiscus tea 2 teaspoon honey Extra ingredients Ice cubes/frozen strawberries Cucumber/lemon/mint leaves for garnishing. How to make Put first five items together and bring to a boil. No need to peel the ginger just wash it. Allow to boil for 8-10 minutes. Take off heat, put in hibiscus tea bag and add honey. Leave to cool down completely, sieve and serve over ice cubes/frozen strawberries. Garnish with cucumber stripes, lemon or fresh mint leaves.      ...

Ghanaian Plantain Bread

All you need 2-3 small ripe plantains (easily mashed) 1/3 cup melted butter 3/4 cup brown sugar (packed, light or dark) 1/2 teaspoon salt 1 large egg, beaten 1 teaspoon vanilla extract 1 1/4 cup all purpose flour 1/4 cup natural unsweetened cocoa powder 1 teaspoon baking soda 1 tablespoon Chinchinga spice How to make it With a fork or blender mash plantain until loose. Add melted butter and brown sugar mix very well to break all the sugar lumps. Whisk egg and add to sugar mixture. Add salt and vanilla extract. In a different bowl sift flour and add cocoa powder, baking powder and Chinchinga spice. Whisk to combine completely and add to plantain mixture. Mix together and pour the batter  into a greased bread pan. Bake in 175°C for 1 hour. You can check if bread is done by pressing the middle section. If feels firm and bounces back then it's done. Ghanaian Chinchinga Spiced Baked Sweet Potatoes

All you need 1 or 2 medium size sweet potatoes 2 tablespoon of coconut oil 1-2 tablespoon Chinchinga spice Extra salt to taste How to make it Pre heat oven with baking tray 175 degrees Peel and cut sweet potatoes into stripes. Big fries would be soft and small fries would be crispy. Your choice. In a large bowl toss potatoes with coconut oil to coat. Sprinkle with Ghanaian chinchinga powder, making sure to cover the sweet potatoes. Spread onto now hot baking tray in a single layer, being sure not to overcrowd. Bake until sweet potatoes are tender and golden brown, turning occasionally, about 15-20 minutes. Heating the baking tray helps to get the crunch on the chips. Enjoy with baked chicken, fish or a Ghanaian coleslaw(recipe coming soon).
