No Eggs Plantain Waffles

    I love plantains and most importantly, I love exploring with them in all sense of recipes.  Personally, I have about 5 recipes for making #plantainwaffles. But this recipe is what my children always eats without fussing.  Over ripe plantains just like bananas are naturally sweet hence, no need for sugar in this recipe. Also due to the high starch content in plantains, you won't need eggs for this recipe either. I used maize flour instead of wheat in making these waffles, so this recipe is wholly gluten free and vegan. Therefore this should work for all who aren't familiar with African ingredients as it's simple to make and equally delicious.  Ps. My sincere apologies for the unformatted arrangement of photos. Meal Prep- Gari Shitor

So basically, gari shitor is a mixture gari (grated and toasted cassava made grits like) and shitor ( spicy, chili sauce). Photo above is a vegan version with fried ripen plantain, avocado and and extra #veganshitor . Photo below is what this recipe will serve you. I recommend you add some salad for freshness. For this recipe, doing my #GhanaianGlutenfreeDiet, I added some vegetables and shrimps for extra protein. Gari Bread

As you may know, I am on  solely Ghanaian diet this year  for my fitness goals. And to give me varieties in my meals, I am switching up and creating recipes with mostly Ghanaian ingredients. This recipe is my first attempt for this high fiber and iron enriched gluten free bread. All ingredients can be sourced locally and you can try frying this recipe in absence of a oven(I haven't tried frying it yet, that would be your challenge in you dare lol).  I will keep working on this recipe to achieve a very lighter texture and also a vegan possibility. Tuna Shitor

A real quick recipe for my tuna shitor. This is exactly how I prepared it, prior to the day my guests  were  visiting us.  The important tip is, allowing the sauce to slow cook for hours so all the moisture burns out. I must confess the best way I enjoyed this particular tuna shitor was with some delicious Ghanaian sugar bread. The sweetness of the bread was a perfect balance with the spicy and savoury shitor. Ghanaian Gari Cake

Gari is dried grated cassava grits popularly eaten in Ghana and also most West African countries. For me, gari is one of the Ghanaian cereals that is always found in my pantry here in Finland. I am crazy for my #Ghanaianglutenfreediet and gari, being gluten-free and really high in fiber just gets me excited with various recipes.
