Simple No Flour Apple Crumble

Easy delicious apple crumble perfect for breakfast and yummy dessert. All you need 5-6 small apples or 3 big apples 1 tblspn cinnamon powder 100g unsalted butter 1 dl almond powder 1 dl brown sugar 90g oats How to make it Peel and cone apples Cut into sections and arrange in a pie bowl Sprinkle cinnamon evenly over the apples Melt butter and add rest of ingredients Mix to combine and spread over apples making sure to cover apples completely. Bake at 200° for 30 minutes or till golden and cooked. Enjoy as a healthy breakfast or as dessert with vanilla custard.

Chichinga Powder Spice ( Ghanaian dry spice rub)

All you need. 150–200g peanuts, ground and roasted 2 tsp ground hot or cayenne pepper 1 tsp smoked paprika 1 tsp ground ginger 1 tsp ground nutmeg 1 tsp garlic powder œ tsp ground cloves œ tsp ground cinnamon 1 tsp salt How to make it Mix all the ingredients for the spice mix together in a bowl. Chichinga powder is ready. Transfer to an airtight container in a cool, dark place. Store for up to one month. You can use it to spice and bake potatoes, sweet potato , chicken and more. This Ghanaian spice is so versatile and I use it a lot at home.

My Ghana Jollof (why You must eat Ghana Jollof)

The recipe is my mother's. I recall how she always made sure her Jollof was always light and fluffy. As a child growing up, Jollof was cooked only during special occasions like birthdays, vacation parties at school ( our day as we say it in Ghana), family occasions like naming ceremonies, family meetings and other festivities. In my family, Jollof was more than a good meal to be eaten during occasions. It was a tradition. A tradition where my mother always cooked Jollof every new year. Watching her cook with so much passion and grace is something I try to remember when I'm cooking my Ghana Jollof today as a mother myself. When I once asked for the recipe (during my high school days as I was studying Food science then), her reply was to send me to the market to buy some food stuffs. Plantain Balls

When I first tested this recipe it didn't come out as I wanted. Finally glad it came together perfect. All you need 1 plantain  (makes 8 balls ) 1 cup breadcrumbs seasoned 1 egg Oil for frying How to make it Cut plantains with skin on into 2 inch sizes( I made 8 from my big size Plantain ) Boil till plantain starts to push out of the skin Drain and immediately add cold water to stop further cooking and also cool them. Take out of water and pill them carefully. Roll them in your hand into balls carefully squeezing out the extra water Prepare breadcrumbs in a bowl and beat egg also in different bowl Heat oil Start frying by first coating in crumbs, then egg wash and back to crumbs for a second coat. Deep frying till golden brown and cooked. Enjoy. Enjoy as desired

African Tamales Abro ne Nkati Ghanaian maize snack

All you need 1 cup of dry corn grits or crushed corn 1 cup of raw peanuts Pinch of salt 6 dried corn husks How to make it. Soak corn grits in cold water with a pinch of salt/1 tsp for 3 hours.  Soak corn husk for 15 minutes and pat dry Next sieve corn and with a spoon scoop into soaked husk. 1-2 tablespoons or enough so you can wrap.(makes 3 big wraps or 4-5 small wraps) Add about 1 tablespoon of raw peanuts. Tie carefully with some extra corn husk torn into small yarns. You can also use a kitchen yarn to tie. Put them into a deep saucepan and add water to cover completely. Boil 1-2 hours or till corn is soft and cooked.  Enjoy by itself as a full snack or with salad for a great lunch or dinner. Tip: you might need to keep adding water so always watch when it's cooking.

Finnish Rutabaga Frittata

I really love it when recipes I keep trying finally works out. I am all about easy, simple, and quick yet healthy and delicious meals. This is my take on one of Finland's most loved food ingredients, Lanttu. It's delicious and so versatile just like most of my Ghanaian foods ingredients. Give it a try and hope you love it also . Recipe All you need 2 tbsp olive oil 120g grated lanttu /rutabaga/swede 2 eggs, beaten 1-2 spring onion, sliced 5-6 sage leaves, roughly chopped 10g /2 tablespoons cheddar, grated How to make it In a small non-stick frying pan, heat oil over a medium heat. Add grated rutabaga then fry until beginning to crisp, about 4 mins. In a bowl, whisk together eggs, spring onions, sage and some seasoning. I used just salt because I wanted to maintain the sweet flavours of the rutabaga. Heat the grill. Pour the eggs into frying pan, mix quickly, lower the heat, and sprinkle over cheese. Ghana Jollof (made easy)

Plated Jollof with Shito and Avocado Ghana Jollof Recipe  (my style) All you need: 100ml of vegetable oil 1 medium size onion 1 tsp chili powder 1 tblspn tomato paste 200g can crushed tomatoes or plum tomatoes. 1 vegetable stock cube  1-2 dry bay leaf  1/2 tsp each of curry powder,  ground nutmeg, white pepper and dry basil. Salt to taste. 1 cup rice. 1 cup water. How to make it: First make the tomato sauce. In a frying pan add sliced onion to hot oil over medium heat. (This is MY quick and easy go to recipe 45mins or even less and your jollof is ready) . Add chili powder and tomato paste. Stir to combine and add crushed tomatoes. Cook for 15 mins stirring occasionally.  Add spices and salt to taste.  Next wash and add rice, I used jasmine rice, with 1/2 cup of water to tomato sauce.
